This is the phenomenon of diffusion of liquid into the surrounding atmosphere. Generally, the perfume is in the form of liquid. When the bottle is kept open, the molecules of perfume from the bottle start diffusing in the surrounding air. The volume of perfume is reduced as the number of molecules inside the bottle is reduced and diffuse into the air. Since the motion of molecules in the liquid is small, it takes a few days for the molecules to leave the bottle. Hence it is a Physical change.
