Digestion of fats takes place in the small intestine with the help of bile juice which acts as emulsifier and breaks down the larger fat droplets into smaller ones. They are then acted upon by lipase enzyme found in pancreatic juice and intestinal juice which convert them into monoglycerides and fatty acids respectively.

Chylomicrons are the lipoproteins that consists of triglycerides and phospholipids coated into a protein molecule. 
 
Since fats cannot be absorbed as such in the small intestines, they are reformed into very small protein coated fat globules called chylomicrons which are transported into lymph vessels in the villi of small intestines.
 
Bile is a digestive juice secreted by the liver. Although it does not contain any digestive enzymes, it plays an important role in the digestion of fats. Bile juice has bile salts such as bilirubin and biliverdin. These break down large fat globules into smaller globules so that the pancreatic enzymes can easily act on them. This process is known as emulsification of fats. Bile juice also makes the medium alkaline and activates lipase
The fatty acids and glycerol from fat digestion enter the epithelial cells of villi of the small intestine by the process of passive diffusion. From there it enters into the blood stream and move throughout the body.
