Is cork an example of Sclerenchyma ?

Yes,

Cork originates from cambium layer and formed as a secondary meristem from a layer of collenchyma or parenchyma immediately beneath the epidermis. Unlike dead sclerencyma cells the cork cambium cells divide only periclinally and daughter cells arise. 

But, Mature cork cells are dead and shows the sclerenchyma characteristics.
