In fermentation, apart from yeasts we also require sugar or starch for the preparation of wine and alcohol. Commercially in alcohol production flour of grains or molasses are used as a source of starch. In wine supply of glucose comes from grapes. When yeast is added to the starch, it starts anaerobic respiration which in turn produces alcohol and carbon dioxide as byproduct. Wine and other forms of alcohol are also prepared with the same principle.

As you have stated fermentation is the process of converting sugar into alcohol and CO2 is known as fermentation and X in this statement is YEAST........because it performs anaerobic respiration which results in the formation of CO2 and alcohol
