Sweet potato does not have eyes like potato. These eyes are axillary buds which show that potato is a stem modification. In case of sweet potato they are absent which shows that sweet potato is root modification.

This is because potato is a stem modification as we can see buds also called eye.these buds are axillary bud modification but we can not see any such structure in sweet potato.also there is presence of some roots on the sweet potato which lacks in potato.Hence we can conclude that sweet potato is a root modification which stores food wheras potato is a stem modification which serves the same function i.e stores food.
