Respiratory quotient is defined as the ratio of the volume of carbon dioxide released to the volume of oxygen consumed in respiration over a period of time. 
$\mathrm{RQ} = \frac{\mathrm{Volume} \mathrm{of} \mathrm{carbon} \mathrm{dioxide} \mathrm{released}}{\mathrm{Volume} \mathrm{of} \mathrm{oxygen} \mathrm{absorbed}}$
During anaerobic respiration, there is no consumption of oxygen. Carbon dioxide is produced in most of the cases. Hence, respiratory quotient is infinity.

$\mathrm{RQ} = \frac{\mathrm{Volume} \mathrm{of} \mathrm{carbon} \mathrm{dioxide} \mathrm{released}}{\mathrm{Volume} \mathrm{of} \mathrm{oxygen} \mathrm{absorbed}} = \frac{\mathrm{Volume} \mathrm{of} \mathrm{carbon} \mathrm{dioxide}}{0} = \mathrm{Infinity}$
