What are hydrocolloids??

Hydrocolloids are substances that have the capacity to hold water. These substances absorb water and increase in size.
Algin (red algae) and carrageen (brown algae) are some important sources of natural hydrocolloids. These hydrocolloids are used in the food industry in the manufacturing of jellies. Some hydrocolloids such as agar is used in the making of culture media for the growing microorganisms.

 A hydrocolloid is defined as a colloid system wherein the colloid particles are dispersed in water. A hydrocolloid has colloid particles spread throughout water, and depending on the quantity of water available that can take place in different states, exa. gel or sol (liquid). Hydrocolloids can be either irreversible (single-state) or reversible. For exa. agar, a reversible hydrocolloid can exist in a gel and sol state, and alternate between states with the addition or elimination of heat.

Many hydrocolloids are derived from natural sources.
