What happens inside the matter during this change of state

In any state of matter, the particles are bonded with each other through certain intermolecular forces. These forces are quite strong in solid whereas weakest in gases. These states of matter can interconvert to each other by either application of pressure or temperature.
When the physical state of matter changes, the intermolecular forces between particles also changes that results in change in intermolecular distance between particles.
Like during melting of solid to liquid, intermolecular forces decreases that increase the distance between particles and bond become weak.
