Sprouting is the process of germination of cereal grains. Sprouting give rise to new shoot buds, new leaves.
When a seed (assume it as Un sprouted) grows into a new seedling (assume it as Sprouted) it requires a lot of proteins, vitamins and carbohydrates for its growth. The conversion of storage proteins of cereal grains into albumins and globulins during sprouting may improve the quality of cereal proteins.
So in order to develop new shoot bud, sprouted beans have less protein content compared to un sprouted beans.
