Transverse waves have 2 components (electric E component, and a magnetic M component) these two components propagate at right angles to each other (i.e. it travels in two dimensions). Therefore it is possible to polarize transverse waves. Example electromagnetic waves. Hence, X rays can be polarised.
Sound waves in air travel parallel to the direction that the particles within it oscillate it therefore they are longitudinal in nature - it propagates in 1 dimensional direction so it can not be polarized.

Yes to xrays but no to sound waves because they are air pressure waves. sound waves are not electromagnetic (EM) waves at all.
