Why ruminants cannot chew food properly at the time they take in?

Ruminants (animals such as cow, buffalo etc) cannot chew food properly at the time they take it in because these animals eat grass which is rich in cellulose and cannot be digested easily.

That takes time. While ruminants are feeding, they are exposed to predators. By bolting the food and chewing it later, they minimize their exposure.
