Why the turmeric stain on a cloth becomes reddish while washing with soap ?

Turmeric contains pigments like xanthophylls, carotene etc. Xanthophyll gives the yellow colour to turmeric whereas carotene is responsible to express red colour but remain dominated by xanthophylls in normal dry condition. When the yellow stain of turmeric comes in contact with detergent mixed water, the fatty acids present in detergent react with the stain and the carotene pigment of detergent becomes more active than xanthophylls. As a result, the stain turns red in colour.
