Some crops are harvested in summer and some in winter. Why?

Some crops grow in summers because they require 
hot conditions and more rainfall to grow. e.g. Rice, Maize. Such crops are known as Kharif or summer crops. They are sown during the months of June and July and harvested in October (before winters). 
Similarly, some crops require cold and moist climate to grow. e.g. wheat. They are known as Rabi crops. They are sown in the month of October and November and harvested before summers in March or April. Summers can spoil such crops as they grow best in winter conditions. This is why they are harvested before summers. 
Crops are harvested when their growth is completed.
