If plant is supplied with excess water, the water gets logged in the soil and will interfere with exchange of gases. This will affect the rate of photosynthesis and respiration in plants thus ultimately affecting the growth of the plant.
If insufficient water is supplied to the plant, the plant will dry, wilting occurs and finally plant dies. This also affects the photosynthesis process which requires water as one of the reactant.

This statement justifies - What will happen if we water the crops more or less? The answer would be that if we water the plants more, it won't be able to absorb the water, for instance, if you drink 5 bottles of water per hour, you would vomit or you will have other gastric problems because you won't be able to absorb that amount of water in just one hour. Perhaps, you would be able to drink the water in 5-6 hours or more but not in one hour. Just like that, the crops cannot drink excess of water at the same time. Neither you should water the plants less, otherwise they will dry and finally die because of lack of water in them.
